A collaboration between Pastry Chef Miko Aspiras and Executive Chef Daeun Kang, Dreamy Cloud is a delicate opera cake layered with almond sponge, macadamia praline mousse, yuzu flan, and caramel ganache.
Resting on a sable base and crowned with a salted cream ‘cloud’, it’s finished in white chocolate velvet and gold leaf, then served tableside with a warm pour of passionfruit sauce.
