Each week highlights a different renowned Japanese brewery, offering a unique exploration of style, terroir, and craftsmanship. Guests will enjoy 30ml pours of three premium sakes from the featured brewery, each selected to reveal the depth and character of its tradition.

To elevate the experience, Head Chef Daeun Kang has created bespoke amuse-bouche pairings;
delicate bites designed to complement and enhance each sake. Expect refined creations such as a Comté Gougère, Tuna Temaki, and Snapper Tartlet.

 Founded in 1921 in Hagi, Yamaguchi, Toyobijin produces elegant, fruit-driven sake known for balance and refinement. Despite flood devastation in 2013, the brewery rebuilt with renewed focus, gaining international recognition, with “Ichibanmatoi” even served at diplomatic events.

Based in Yamagata since the 1830s, Tatenokawa is renowned as the first brewery in the region to produce only Junmai Daiginjo. With high rice-polishing ratios and premium local rice, they are celebrated for elegance and aromatic complexity.
